Low Fat Cake

150 gm corn oil
100 gm egg yolk
175 gm low protein flour
100 gm carrot
100 gm apple
100 gm pineapple
Cinnamon(optional)
100 gm egg white
Jelfix
croquant or flaked almond
100gm sugar
50gm fresh milk
15 gm baking powder
100 gm ground almond/hazelnut
50 gm castor sugar
100 gm chop nuts(optional)

Method
Cream oil and sugar.Add in egg yolk,milk,flour,baking powder into the mixture little at a time.Add ground almond,carrot,apple,pineapple,lemon essence and cinnamon.Whip egg white and 50 gm sugar to a snow and fold in.Bake at 200C.
When cake is cold,glaze with jelfix.Coat the sides of the cake with croquant or flakes almond.Sprinkle smow powder on top of the cake.
