Trip to Pangkor Island

Pulau Pangkor is an island off the coast of Perak in north-west peninsular Malaysia, reached by ferry from Lumut (a small coastal town that links to Ipoh, or from Sitiawan). It has a land area of only 8 square kilometers, and a population of approximately 25,000 islanders. It is heavily promoted as a low-key tourist destination by the Malaysian government, but fishing and fish products remain major industries.
Historically, Pangkor was a refuge for local fishermen, merchants and pirates. In the 17th century, the Dutch built a fort in an effort to control the Perak tin trade. In 1874, it was the location of a historic treaty between the British government and a contender for the Perak throne (The Pangkor Treaty), which began the British colonial domination of the Malay Peninsula.
Pangkor is famous for its fine beaches and a mix of low budget to 5 star accommodations. Teluk Nipah and Coral Bay on the north west of the island is extremely popular with travellers from Europe. The quality of sand in the Pasir Bogak Beach is far superior to that elsewhere on the island. The sand is golden brown, quite similar to most leading prime beaches. There are a few resorts in Teluk Nipah or Nipah Bay.
Since the 2004 Indian Ocean tsunami in Indonesia, Thailand and to a lesser extent the West Coast of Malaysia in December 2004, there have been fewer local tourists visiting Pangkor.
In 2006, a biotechnology centre, a joint venture of Global Hi-Q Malaysia S/B and Hi-Q Bio-Tech International (Taiwan) Ltd began operations with initial investments of RM100million (USD30m). Their operations include fish farming and aquaculture, and the first harvest is expected in 2009.
Just next to island of Pangkor, there is a smaller island called Pulau Pangkor Laut.

Me and my family went for a holiday trip at Pangkor island in Perak, Draulridzuan.Its kind of new experienced as before this we used to go to Langkawi Island in Kedah.We stayed in one of the chalet at Nipah Beach,every water activities happens to be infront of our chalet at nipah beach.Me and my family really have a good time expecially the girls,we wish we can be more organized in our next visit ..and have more fun.

Ayam Penyet(popular indonesian recipe)

Ingredients:
  • 6 large chicken legs or breas, deboned
  • 2 stalks lemon grass, crushed
  • 2 bay leaves (salam leaves)
  • 1 tbsp coriander seeds (ketumbar)
  • 1/2 tsp ground cumin (jintan manis)
  • 2 tbsp thick coconut milk
  • 1 tsp sugar
  • 1 tsp salt
  • 2 tbsp cooking oil

Ingredients to grind:
  • 3 cloves garlic
  • 1 red chilli, seeded
  • 2 cm knob tumeric
  • 120g lengkuas, peeled and sliced
  • 4 slices ginger
  • 3 candlenuts (bush keras)

How to:
  1. Fry coriander seeds over slow fire till fragrant then grind coarsely.
  2. Wash chicken and drain well. Prick chicken all over with a fork.
  3. In a mixing bowl, combine ground spices with ground cumin, coriander, salt, sugar, coconut milk and crushed serai. Add chicken and mix thoroughly. Leave to marinade for 30 minutes.
  4. Grease base of cooking pot with some cooking oil. Arrange chicken in pot, add crushed bay leaves. Cover pot and cook over moderate heat for 8 minutes. Turn chicken over, cover pot and continue to simmer for another 10 minutes or until almost dry. Remove chicken and drain off excess liquid.
  5. Grill or roast chicken on high heat, 250 deg Celcius until golden brown on both sides.

Chocolate Cheesecake

Ingredients

  • 250g bitter dark chocolate, chopped

  • 250ml UHT whipping cream

  • 450g cream cheese

  • 150g castor sugar

  • 2 large eggs

  • 1 egg yolk

  • 1 tbsp corn flour

  • 1/2 tsp vanilla essence

  • 1 tbsp Tia Maria (coffee liqueur)

  • Cocoa powder and icing sugar for dusting
    Method
    Line the base of a spring-form pan, grease the sides and wrap a double layer of aluminium foil around Its base to prevent water leaking in or batter leaking out.

    Bring whipping cream to just a boil over low heat; add in the chopped chocolate and leave aside for 1–2 minutes. Stir well to dissolve the chocolate until mixture turns smooth. Set aside to cool.

    Beat cream cheese and sugar until creamy and smooth. Beat in eggs and egg yolk one at a time until well combined. Stir in corn flour, essence and coffee liqueur. Add the cooled chocolate mixture to combine. Beat until well incorporated.

    Pour batter into the prepared spring-form pan. Place pan in a large roasting pan and pour hot water into the roasting pan until halfway up the sides of the spring-form pan. Bake in preheated oven at 180°C for 40–50 minutes.

    Switch off the oven and leave the cake inside for around 40–50 minutes then remove from the oven and allow to cool completely.

    Cover with plastic wrap and refrigerate the overnight. Remove cake from pan and sift cocoa powder or icing sugar to garnish.

    Seafood Tom Yam

    Ingredients
    # 8 freshwater prawns, shelled and deveined with tails intact or you can choose not to shell the prawns
    # 150g sotong, cleaned and cut into pieces
    # 2 blue crabs, cleaned and cut into halves
    # 5 pieces red snapper fish meat
    # 100g abalone mushrooms
    # 6 cups chicken stock
    # 20g galangal (lengkuas)
    # 3 stalks lemon grass (serai)
    # 12 cilipadi
    # 3 roots Chinese parsley
    # 4 tbsps chilli paste in oil (Nam Prik Pao)
    # 6-8 kaffir lime leaves (daun limau purut)

    Seasoning:
    # 1 tsp salt, or to taste
    # 1-2 tbsp fish sauce (nampla)
    # 3-4 tbsp lime juice
    # 1 tbsp oil
    # 2 tbsps Maggi chicken stock granules
    # Monosodium glutamate to taste

    Garnishing:
    # Chopped coriander leaves

    Method
    Smash the galangal and lemon grass slightly. Put them in a pot, add the cilipadi, parsley roots and chicken stock. Bring to a boil and add nam prik pao and kaffir lime leaves. Simmer for 10 minutes.

    Put in all the seafood ingredients and mushrooms and bring to a boil until the seafood is cooked. Add in seasoning to taste. Serve hot and garnish with coriander leaves.

    Dendeng Manis

    Bahan-Bahan :
    500  gram dendeng sapi(lembu)
    lembar daun salam
    sendok teh garam
     
    Bahan  bumbu (dihaluskan/tumbuk kasar) :
    10  buah cabe merah besar,buang biji
    butir bawang merah
    siung bawang putih

    Cara Mengolah :
     
    1. Rendam dendeng dengan air dingin hingga lunak.
    2. Angkat dan tiriskan.
    3. Iris dadu 4 x 4 cm.
    4. Goreng dendeng cepat dalam minyak panas dan banyak.
    5. Angkat dan tiriskan.
    6. Tumis bumbu halus hingga harum.
    7. Masukkan dendeng. Aduk sebentar. Angkat.
    8. Sajikan dengan nasi hangat.

Located on the northwest coast of Java, it has an area of 661.52 km2 and a population of 8,489,910.twelfth-largest city in the world.I was in Jakarta for a visit to Tanah Abang, Tanah Abang market is located in the Kelurahan Kebon Kacang. The Kelurahan is served by the Tanah Abang railway station, which is located in the western border of the administrative village. The market has been known to exist since 1735.Tanah Abang market is the main textile trade in Indonesia.

    The 2 huge building have all that you need from textiles,blouses,shirts,jackets,children costume and more and more.One day would never be enough for a tour and shopping at tanah abang.I was in tanah abang,wtc,atc and chempaka emas for a tour and shopping.I did get the material that I wanted and all the cotton blouses to put on sale in  Malaysia.Its a worth trip and very cheap.

    Chicken Pie With Cream Of Mushroom Soup

    Ingredients
    Flaky pastry:

  • 250g plain flour, sifted

  • 55g butter

  • 115g pastry margarine

  • 1/2 tsp salt

  • 1 tsp lime juice

  • 100-150ml ice-cold water

    Filling:

  • 200g chicken meat, diced

  • 1 Bombay onion, diced

  • 100g button mushrooms, quartered

  • 75g potatoes, parboiled till cooked and diced

  • 75g carrots, diced

  • 50g celery, diced

  • 50g green peas

  • 1 tin cream of mushroom soup, diluted with 1 tin of water

    Seasoning:

  • 1 tsp oyster sauce

  • 1 tsp light soy sauce

  • Dash of white and black pepper

  • 1/4 cube chicken stock

  • Pinch of salt

    Thickening (combine):

  • 1 tbsp corn flour

  • 2 tbsp water

    For egg glaze or wash, beat:

  • 1 egg yolk

  • 1 tsp water

  • Pinch of salt Method
    To make flaky pastry: Place flour, salt and butter in a mixing bowl. Mix till fine crumbs form. Add ice water and lime juice to bind. Knead lightly. Chill for 30 to 40 minutes.

    Put dough on a lightly-floured surface and roll into an oblong shape, 38cm x 14cm. Cut pastry margarine into small pieces. Spread half the pastry margarine pieces on the centre of the rectangle.

    Fold the left side of the rectangle to cover these margarine pieces. Dot or spread the remaining pastry margarine pieces on top of the fold. Then fold the right side of the rectangle to cover these magarine pieces.

    Press the edges well to seal and roll out the pastry into a rectangle. Refrigerate for 15 minutes.

    Repeat this process two times then roll out pastry into a rectangle again. Cut pastry into rounds. Use one piece to line a tart mould. Add filling and egg wash the rim, then cover with another piece of round pastry. Egg wash the top and bake in a preheated oven at 220°C for 25 minutes.

    To make filling: Heat 1 tbsp butter in wok, then saute onions until soft. Add chicken and button mushrooms. Stir-fry well. Add carrots, celery, potatoes and cream of mushroom soup. Blend in seasoning. Cook for two to three minutes. Add thickening and green peas. Dish out to cool.

    For variation: Brush four ramekins with melted butter. Spoon filling into prepared ramekins. Cut four circles of pastry slightly larger than the tops of the ramekins, and make a small slit in the centre of each with a sharp knife.

    Place circles over the fillings and press the rims to seal. Brush with egg glaze and bake in a preheated oven at 220°C for 20 to 25 minutes or until pastry turns golden brown.


  • Emy's Sambal Udang

    Ingredients

  • 600g large prawns

  • 3 to 4 tbsp oil

  • 25g dried prawns, soaked and pounded

    (A) Ground and combined:

  • 5 shallots

  • 3 cloves garlic

  • 2cm piece fresh turmeric

  • 3cm piece galangal

  • 1 stalk lemon grass

    (B) Mix into a paste:

  • 1 tbsp meat curry powder

  • 1 tbsp chilli paste

  • 1/2 tsp belacan granules

  • Juice of 1 lime

  • 2 tbsp thick santan

  • 3 kaffir lime leaves, sliced finely

    Seasoning:

  • 1/2 tsp salt or to taste

  • 1/2 tsp sugar

  • 1/2 tsp ikan bilis stock granules

    Garnishing:

  • Cucumber slices

  • Coriander leaves Method
    Wash and trim prawns neatly but leave shells intact. Set aside.

    Heat a non-stick wok with oil until hot. Add dried prawns and fry until flagrant. Add ingredients (a) and (b) and continue to fry until aromatic. Add a little santan if ingredients get too dry.

    Add prawns and lime juice. Stir in remaining santan and bring to a boil. Cover and cook until prawns turn red. Add seasoning and kaffir lime leaves. Stir well then dish out and serve with garnishing.

    Romance Scam




    They're perfect. In fact, they're someone you could see yourself spending the rest of your life with. A decent person with a good job or business in search of a good, honest partner to settle down with.

    You or someone you know may be dating this person online right now. However, be warned. Things aren't what they appear to be. In reality you're talking to a criminal sitting in a cybercafe with a well rehearsed script he's used many times before. He's hunting through chat rooms, dating sites and social networking sites searching for victims, looking to cash in on romance. If you are over 40, recently divorced, a widow, elderly or disabled then all the better in his eyes. Scammers are adept at psychological profiling, and use any weakness they find to their advantage.

    It's the newest evolution of the Nigerian advance fee (419) scam. Instead of sending spam letters that promise millions for your assistance, these scammers are targeting single men and women who are searching for love online.

    They use psychological tricks to lure their victims in, use poetry and even gifts to get them under their spell, then once you are there, will try to reach for your wallet, all the time declaring their "undying love" for you. The scam may take the form of asking you to cash a cheque for them through your bank account because they are "out of the country" and unable to cash it themselves, or they may come right out and ask you to send money to help them out of a fabricated "financial difficulty" they claim to be experiencing. These are all lies used to try to make them easy money from an unsuspecting victim.

    The sad truth is, for every real profile you see on the internet, there are numerous false ones pretending to be your perfect mate and using photographs stolen from modelling or social networking sites. The people in the photographs are as much victims as the people who get scammed for hundreds, thousands, even tens of thousands of dollars.Internet romance scams and other related crimes are very real, and they are affecting -- even ruining -- lives throughout the world.

    The best weapon against this crime is education. The more people that are educated in the ways the scams work, the harder it is for the scammers to make money and the more scammers that can be put out of business.

    Romancescam.com was formed in 2005, originally as a site to add the details of any scammers who tried to join the datingnmore.com dating site. As the list grew, more sections were added to make the site what it is today - the largest and most influential online resource against romance scammers from around the world. It has gained media attention worldwide, and has been featured on an episode of the Oprah show.

    Today's romancescam.com is much more than simply a list. It features a forum with over 17000 registered users and more than 60,000 articles posted by it's ever growing membership. It also houses an impressive album of photographs used by romance scammers. You can take a test to see what the likelihood is that the person you're talking to is a scammer. There's a blog with the details of scammers that were removed from datingnmore, currently featuring around 5000 fake dating profiles that were added in less than 2 years. The latest addition to the romancescam family is scamdigger.com, where you can upload the photographs sent to you by a scammer and let it search not only romancescam's image database, but also those of several other sites. This features a database of over 80,000 photos and is added to on a regular basis.

    Jamu(Tradisional Herbal Medicine)-must try !

    'Back to nature' is not merely a slogan in Java and Indonesia. The visible proof is the use of traditional herbal medicine of various type of 'medical plants', either from the leaves, the fruits, the roots, the flowers or the barks, etc.

    Finally, a hair oil by the name of cemceman, made of coconut oil with pandanus , kenanga flower, jeruk purut etc. is applied.
    Skin Care
    For face caring, bedak dingin (cool powder) is applied. It's made from tendered rice with special ingredients, such as pandanus, kenanga flower etc.

    For other parts of the body, lulur is applied, popularly known as mandi lulur (lulur bathing).
    Lulur is also made from tendered rice, pandanus, some leaves of kemuning (with yellow color) and some medicinal roots. The lulur should stimulate the body to throw out the dead cells, replace it with new ones, stimulate blood circulation under the skin, smooth the skin and at the same time scents it.
    Steaming the body
    Steams of several boiled herbs are applied to ensure body freshness, including the woman organ. The steaming took about a ½ hour.

    Besides the traditional cosmetics made by hand, in the country there are some big and well known manufactures of cosmetics, using modern machinery. These products are used widely across the country, even this cosmetics have been exported to many countries of the world.

    How can a muslim man raise up his woman to build a better family?

    The Question is How can a man lift up (rise) (take his wife's hand) to build a better nation, and not to let her down like most people do these days ?

    The question u answered (that I didn't ask) is? how can a woman lift up her man ?
    In my opinion the meaning of Mother Eve's name and how she was created is also not the key to the answer. I want to discuss the practical solutions (by the Man).

    Keep in mind this is a "Man magazine", So our advice is towards men and how they can build a better nation as they did before in centuries.

    My question is about the role of man to build his family and then his nation as well. How to deal with his wife with his children, the man is the leading role and I've found alot of muslims' homes now are not stable enough not because women, but coz of men's role is not enough, I think instead of giving orders to women, let's see our own role and our own disadvantages and to focus on man's manners not women's.

    In this group we want to fix men's negative attitudes to reflect this on his family then the whole nation.

Making up our mind means ensuring that our thoughts are positive and our feelings towards others are filled with good wishes.     Ingredients
    Makes 150


  • 500g cake/superfine flour, sifted

  • 350g peanuts, shelled and skinned

  • 250g ghee (unsalted), melted and cooled

  • 1-1½ tsp of salt

  • 2 eggs

  • Icing sugar (sifted) for coating

    Method
    Fry sifted flour over slow fire until it is dry, light and leaves the sides of pan/wok.

    Fry peanuts over slow fire until fragrant. Grind while the peanuts are still warm.

    Combine fried flour, ground peanuts and salt in a mixing bowl. Blend well.

    Add eggs and melted ghee to the dry ingredients.

    Beat with the paddle attachment of your mixer at low speed to mix. Stop mixing as soon as a dough is formed.

    Form dough into balls of preferred size. Place balls on grease proof paper. Bake in preheated oven at 180 degrees Celsius for 10-15 minutes.

    Cool cookies on the baking tray for 15-20 minutes. Coat cookies with sifted icing. Store cookies in an airtight container.

    A parent's guide to discussing dating: teenage daughters


    Dating is the last thing most teens want to discuss with their parents. So how do parents introduce the subject and actually get their offspring to lend an ear?
    Begin by choosing your moments. Teaching moments often occur when least expected, so be prepared. Be open to any discussion, meaning do not go off the deep end no matter what your child asks. Give a calm, honest answer. Avoid using a preachy or commanding tone.

    Recognize an opportunity when it presents itself:
    1) If an awkward moment you feel merits discussion occurs while watching a movie together seize the opportunity.

    2) When something untoward happens in the life of one of your daughter’s friends, use it as a conversation starter.

    3) If your daughter tells you about a teen pregnancy in her school, turn the conversation to prevention and reasons it is best to stay with groups when dating.

    4) At a time your daughter seems receptive to conversation, ask her if she has any questions about dating or dating etiquette. If you get the eye roll, just continue on and make your point.

    5) An excellent time to bring up the subject of dating and expectations is immediately after the school has studied sex education in class.

    6) Books are a great way to get information into the hands of your child. Always remember to tell her to ask any questions she may have after reading the book.

    7) Every parent will be pressured at one time or another to let their child date. Whether or not it is allowed, this is the perfect opportunity to discuss dating rules.

    8) Any time a sibling is having trouble on the dating scene, or parents are having difficulties with an older child over the subject of dating, the younger children are watching. Use tumultuous times in your family to feed dating expectation information to the younger children, but do so without trespassing on the older child’s privacy.

    9) Make your job easier by talking with your children at a young age about dating rules, etiquette, etc. You don’t have to wait until they hit the teenage years to begin discussing the subject in general terms.

    10) For some children, darkness seems to bring anonymity and loosens one’s tongue. When your daughter is ready to turn the light out, sit on the edge of her bed for a “how was your day” talk. You’ll be surprised what subjects these conversations can bring about.


    Mentally go over the points concerning dating that you would like to touch on with your teen in order to be prepared when you do gain her attention. Below are some ideas you might wish to consider:

    1) Curfew and days of the week dates are allowed.

    2) Dating etiquette and what you expect from your teen’s date i.e. cannot go until you meet the date.

    3) The dreaded sex talk.

    4) Discuss date rape, the part drugs play and how to stay safe.

    5) Explain to your teen that she can call you at any time to come pick her up, no questions asked.

    6) Dress code if you have one.

    Listen and respond without passing judgment. Set your rules and stick by them. Above all, keep the lines of communication open.

    Low Fat Cake

    150 gm corn oil
    100 gm egg yolk
    175 gm low protein flour
    100 gm carrot
    100 gm apple
    100 gm pineapple
    Cinnamon(optional)
    100 gm egg white
    Jelfix
    croquant or flaked almond
    100gm sugar
    50gm fresh milk
    15 gm baking powder
    100 gm ground almond/hazelnut
    50 gm castor sugar
    100 gm chop nuts(optional)

    Method
    Cream oil and sugar.Add in egg yolk,milk,flour,baking powder into the mixture little at a time.Add ground almond,carrot,apple,pineapple,lemon essence and cinnamon.Whip egg white and 50 gm sugar to a snow and fold in.Bake at 200C.
    When cake is cold,glaze with jelfix.Coat the sides of the cake with croquant or flakes almond.Sprinkle smow powder on top of the cake.

    Almond Chocolate Cake

    Ingredients

  • 175g dark cooking chocolate, broken into pieces

  • 160g butter

  • 125g soft brown sugar

  • 4 egg yolks

  • 4 egg whites

  • 25g castor sugar

    Combined:

  • 1 tsp vanilla essence

  • 1/2 tsp chocolate essence

  • 1/2 tsp coffee essence

  • 90g self-raising flour, sifted

  • 75g ground almonds Method
    Grease, line and grease a 29x11cm loaf pan. Preheat oven to 180°C.

    Melt chocolate over boiling water. When melted, remove and set aside.

    Beat butter and brown sugar until creamy light and fluffy. Add the egg yolks one at a time, beating well after each one is added.

    Stir in melted chocolate and combined essences. Beat until well blended.

    Fold in sifted flour and stir in ground almonds to mix.

    Whisk egg whites until soft peaks form then beat in sugar until mixture is light and just stiff. Gently fold in by hand the beaten egg white into the chocolate mixture until well blended.

    Pour mixture into prepared pan and bake in preheated oven at 180°C for 10 minutes then reduce to 170°C and continue to bake for 45–50 minutes or until the top springs back when lightly touched. Cool cake in the pan for 5 minutes before turning out onto a wire rack.

  • Lamb Kebab

    Ingredients

  • 900g boneless lamb, cut into 4cm cubes

    Marinade:

  • 2 Bombay onions, chopped coarsely

  • 2 cloves garlic, crushed and chopped

  • 50ml lemon juice

  • 1 tsp coriander powder

  • 1 tsp ground cumin

  • 1 tbsp ginger juice

  • 4 tbsp honey

  • 1 tsp salt

  • 1 tbsp light soy sauce

  • 100ml olive oil

    Yogurt sauce:

  • 300ml plain yogurt

  • 1 clove garlic, minced

  • 1/2 tbsp lemon juice

  • 2 tbsp chopped mint leaves (daun pudina)

  • 2 tbsp coarsely chopped cucumber Method
    Place cubed lamb pieces and marinade into a mixing bowl. Mix well, then transfer into an airtight plastic container and refrigerate for several hours or, preferably, overnight.

    Thread the marinated lamb cubes onto wooden skewers that have been soaked for at least three hours prior to preparing the kebabs.

    Heat a non-stick pan with a little oil. Arrange the lamb skewers (about three in a row) and pan-fry until browned and cooked through. Cook the skewers in batches.

    Alternatively, you can grill the lamb skewers over a barbecue pit until cooked through. You can also grill them in the oven.

    Serve the kebabs with the yogurt sauce.

    For the sauce, combine all the ingredients together in a small bowl and beat lightly with a wire whisk. Cover and refrigerate for a minimum of one hour before serving the sauce with the kebabs.










  • Waffle

    Ingredients

  • 180g plain flour, sifted

  • 1/4 tsp salt

  • 1½ tbsp castor sugar

  • 150ml UHT milk

  • 150ml whipping cream

  • 3 small eggs, separated

  • 1/8 tsp cream of tartar

  • 70g melted butter Method
    Lightly grease waffle plates with margarine.

    In a large bowl, put in the flour, salt and sugar. Add in milk, cream and egg yolks. Beat with an electric mixer until ingredients are blended, occasionally scraping the bowl with a rubber spatula. Lastly add in the melted butter to mix.

    Whisk egg whites and cream of tartar in a separate clean bowl until just stiff. Fold egg whites into the creamed mixture.

    Heat up the waffle-maker until hot then spoon batter into the hot plates. Spread out evenly to cover the surface. Cover and cook according to the manufacturer’s instructions. (Do not lift cover during cooking.) When done, lift cover and loosen waffle with a fork then transfer to a wire rack.

    Repeat until all the batter is used up. Serve the waffles with honey, jam, kaya or even ice-cream.

    Raisin Cookies


    100 gm raisins
    100 gm unsalted butter,softened
    80 gm icing sugar
    1 egg
    vanilla
    160 gm low protein flour
    50 gm ground almonds

    Method

    Cream the unsalted butter and icing sugar until smooth.Then bet in egg and vanilla.Continue beating for about a minute.Then with wooden spatula,carefully fold the flour and the almonds into the batter.The batter should be soft and stir in the raisin.Fill in batter into pastry bag with nozzle.Squeeze to the baking tray and bake at 200 C for 10 minutes.

    Teacher's day

    Cookies or Cupcakes?

    My daughters choose cupcakes,to be honest I am not good on decorating cakes and I let them do whatever they wanted to do for the decoration.Time is late,lucky we did the baking last night and to day is the decorating day.

    As I dont have much choices on the colours but the important things is the girls having fun.After I blend and stir and mix the colours,they get very excited,this is the out come :

    Honey Truffle Cake

    Truffle sponge

    200 gm egg yolk
    50 gm cocoa powder(sifted)
    200 gm egg white
    40 gm castor sugar
    honey ganache (see separate recipe)


    170 gm castor sugar
    100 gm low protein flour(sifted)
    100 ml unsalted butter(melted)
    80 gm whole hazelnut(roasted)

    Method

    Whisk egg yplk and 170 gm castor sugar together.
    In another bowl,whisk egg white with 40 gm castor sugar to soft peak meringue.Fold meringue into the egg yolk mixture.Fold in sifted flour and cocoa powder.Add in hazelnut.

    Lastly fold in melted butter.Bake at 180C until cooked.

    Honey Ganache

    150 gm dairy whipping cream
    150 gm milk coverture(chocolate chip)
    150 gm dark chocolate
    150 gm honey

    Method

    Bring dairy cream and honey to the boil.Melted dark aan milk covertures in the boiled cream.Keep stirring until all the chocolate is melted down.Leave the ganache in  a cool place to set to the right
    consistency(preferably overnight)

    Assembling Honey Truffle Cake

    Slice truffle sponge into three layers.Place layer on a cake board.Brush with sugar syrup.Spread honey ganache on it.Cover with another piece of truffle sponge.Again brush with syrup and spread honey ganache on top.Cover with the third piece of truffle sponge.Coat the whole cake with honey ganache.Decorate as desired.

    Swiss Roll

    250 gm egg yolks
    100 gm sugar
    250 egg whites
    200 gm flour

    Method

    In a bowl,plaves the yolks and sugar.Beat for 3 minutes with mixer or by hand until pale coloured,then stir in flour.
    Beat the eggs whites until stiff,adding the sugar half way through.Mix the yolks into egg whites and stir slowly.
    Pour mixture into the tin and bake at 20 C(450 F) for 7 minutes.
