Raisin Cookies
100 gm raisins
100 gm unsalted butter,softened
80 gm icing sugar
1 egg
vanilla
160 gm low protein flour
50 gm ground almonds
Method
Cream the unsalted butter and icing sugar until smooth.Then bet in egg and vanilla.Continue beating for about a minute.Then with wooden spatula,carefully fold the flour and the almonds into the batter.The batter should be soft and stir in the raisin.Fill in batter into pastry bag with nozzle.Squeeze to the baking tray and bake at 200 C for 10 minutes.
